At Erizo, we are excited to bring one of the most emblematic dishes of Mexican gastronomy to our guests: Chile en Nogada. We invite you to join our festival from July 1st to September 16th to enjoy this delicious culinary tradition that combines history, culture and flavor in one dish.
History and Meaning of Chile en Nogada
Chile en Nogada has its roots in the time of Mexico’s independence. Legend has it that this dish was created by the Augustinian nuns of the Santa Monica convent in Puebla in 1821, to celebrate the country’s independence and honor Agustin de Iturbide, one of the heroes of independence. The original recipe uses ingredients that symbolize the colors of the Mexican flag: the green of the poblano chile, the white of the nogada sauce and the red of the pomegranate.

Our poached poblano chile is stuffed with a succulent mixture of shrimp and arrachera, paired with red wine and accompanied by fresh fruits such as yellow apple, peach, pear, pear, banana, raisins and almonds. All this is complemented with our nogada sauce, a rich combination of pecan nut, walnut, white wine, cinnamon, cream, sherry, heavy cream cheese, goat cheese and a touch of sugar and salt.
Varieties for Every Taste
To satisfy all palates, we offer two variations of this dish, either Traditional or Capeado Chile en Nogada: both are poached, filled with our special blend of shrimp and arrachera, accompanied by nogada sauce, red pomegranate and fresh parsley; and a second option but capeado with egg and wheat flour, fried to a crispy texture on the outside and soft on the inside.
Both versions are designed to highlight the flavors and textures that make this dish so special and beloved in Mexican cuisine.
