What does the Oysterman experience consist of?

Enjoy the freshest oysters in a unique way with our Oysterman. When you order this dish, a friendly and knowledgeable guy walks through our restaurant, offering a selection of the best oysters directly to your table, so you can enjoy the sea in every bite. The oysterman is in charge of offering you the fresh oysters of the day, and he will also prepare them in front of you, using special sauces and dressings that complement and enhance the natural flavors of the oysters. You can watch as he opens each oyster with skill and precision, and then complements them with the accompaniments of your choice.

Our Oysters Selection

We are proud to offer three main varieties of oysters, each with its own unique and delicious flavor profile:

Kumamoto Oysters

Kumamoto oysters are famous for their small size and firm, sweet flesh. Originating from the Kumamoto region of Japan, these oysters have adapted to the waters of the North Pacific and are widely cultivated on the west coast of the United States. They are known for their creamy texture and subtly sweet flavor, with a hint of melon or cucumber that makes them especially refreshing. The shell is deep and ribbed, making them easy to open and a favorite choice for oyster lovers.

Farm Oysters

These Farm oysters are known for their clean and refreshing taste, with a slight mineral note that evokes the waters in which they were grown. Unlike wild oysters, farmed oysters tend to have a more uniform consistency and a less salty flavor. They are ideal to enjoy with a squeeze of lemon and a pinch of salt, highlighting the purity of the sea in every bite.

Kumiai Oysters

Kumiai oysters are cultivated by the indigenous Kumiai community in Baja California. This type of oyster is prized for its robust flavor and firm flesh, offering a perfect balance between saltiness and sweetness, they also tend to be larger and their flavor has a depth that reflects the rich waters of the Mexican Pacific. In addition to their excellent taste, consuming these oysters supports sustainable farming practices and local communities, promoting responsible and environmentally beneficial fishing.

Key Differences Between Oysters

Flavor: Kumamoto oysters are sweet and creamy, farm oysters are fresh and clean, and Kumiai oysters offer a more robust and salty flavor.

Texture: Kumamoto has a smoother and creamier texture, Granja oysters are more consistent and uniform, while Kumiai oysters are firm and meaty.

Origin: Kumamoto come from Japan and are grown in the North Pacific, Granja are local and sustainable, and Kumiai are native to Baja California, grown by indigenous communities.
